Vegetarian Burger Recipe

Ingredients

2 Cups of Textured Vegetable Protein (TVP)

2 Cups of vegetable stock
-
4 tablespoons of ketchup
-
1 teaspoon of chilli flakes

1 Cup of walnuts
-
8 oz or 225 grams of cremini mushrooms
-
1 medium onion, diced
-
2-3 cloves of garlic, minced
-
1 tablespoon tomato paste
-
1 cup black beans
-
3-4 tablespoons beets, grated
-
1 cup of cooked brown rice
-
1 tablespoon of either regular or vegan mayonnaise
-
1 teaspoon of liquid smoke
-
1 cup of vital wheat gluten
-
4 to 5 tablespoons of soy sauce
-
1/2 teaspoon of cumin
-
1 & 1/2 teaspoon garlic powder
-
1/2 teaspoon onion powder
-
2-3 teaspoon salt
-
BBQ sauce (regular or vegan)
-
Cheese slices (regular or vegan)
-
Lettuce, to serve
-
4 burger buns
-
Mayonnaise, to serve (regular or vegan)

Ketchup, to serve (regular or vegan)
Instructions

Mix the ketchup, 3 tablespoons of soy sauce, 1/2 teaspoon of garlic powder, chili flakes and vegetable stock.

Pour in mixture with the TVP and stir to combine. Cover mixing bowl and let it sit for 30 minutes.

Meanwhile, add mushrooms and walnuts to food processor until you get a chopped/crumbly mixture. DO NOT over mix/process into a fine paste!

In a frying pan over medium to high heat add 1-2 tablespoons of cooking oil and cook the mushroom/walnut mixture until all moisture has evaporated. Should take about 5 to 10 minutes

Add 2 tablespoons of soy sauce along with cumin and 1 teaspoon of garlic powder. Keep stirring until mixture is completely dry and then transfer to a bowl.

Add 1 tablespoon of oil to the same frying pan and add the onion. Cook until it is translucent, should take about 3 to 4 minutes.

Add garlic, salt, pepper and tomato paste and cook for another 5 minutes. Set aside.

Add onion mixture and black beans to a food processor and blend until smooth. Set aside.

Transfer both mushroom/walnut and black bean/onion mixtures to a bowl. Go back to TVP mixture and once all liquid has been absorbed (after the 30 minutes) add to the same bowl as other mixtures. Also add cooked brown rice, beets, mayo, liquid smoke and stir to combine.

Add in Vital Wheat Gluten, bit by bit, stirring in thoroughly after each addition. Once it is all added you will notice the final mixture looks and behaves like real minced meat.

Form the vegetarian meat mixture into burger patties.

In a frying pan over medium to high heat cook the patties about 5 minutes per side.

Add cheese slices to melt.

Add cooked burgers to a bun and assemble with mayo, lettuce, ketchup and Enjoy!
