Keto Beef Wellington

Ingredients

1kg cut of beef (I used beef blade roast)

3-4 tbsp butter

2-3 garlic cloves - minced
-
1/4 cup onion - chopped finely

8 oz (225g) mushrooms - chopped finely
-
1 tsp thyme (or Italian seasoning)
-
2-3 tbsp Dijon mustard
-
10 slices prosciutto

Dough:
-
2 cups mozzarella - shredded
-
1 cup almond flour
-
1 egg beaten
-
1 tsp baking powder

Instructions

Melt the butter over high heat in a frying pan. Once butter has melted start searing the meat until brown on all sides. Should take about 5 minutes

Next brush Dijon mustard over the meat making sure to cover the entire surface

Take meat out of the frying pan and set aside to cool
-
In the same pan, turn the heat down to medium high and add garlic, onions, mushrooms and thyme
-
Cook for 10 minutes until the moisture has evaporated. Set that mixture aside
-
On your kitchen counterspace (or large cutting board) set a large pierce of cling wrap (big enough to wrap the meat around)

Lay out 10 pieces of prosciutto on the cling wrap (making sure they slightly overlap) so that it looks like a rectangle

Spread the mushroom mixture over the prosciutto and place the mustard covered beef on top of the mushroom mixture. Use the cling wrap to wrap the prosciutto around the meat so it is entirely covered by the prosciutto. Set this aside in the fridge while we begin to work on the dough

For the keto dough start by melting the mozzarella cheese either in the microwave or on the stove

Add in 3/4 cup of almost flour and baking powder to the cheese and stir all together. Eventually as you mix these ingredients you may need to start using your hands to knead everything together

Add an egg to this dough mixture and continue kneading with your hands for 3-4 minutes

Then add in the remaining almond flour and continue kneading with your hands for another 1-2 minutes until it finally forms a dough

Place the dough between two pieces of parchment paper and starting rolling it out until it is flat and is about 1/4 inch thick

Take the prosciutto-wrapped beef out of the fridge and place in the middle of the dough. Begin to wrap the dough around the meat making sure to seal all edges

Flip the whole thing over and make sure that all edges/seams are at the bottom

Brush with a beaten egg

Next bake at 400 degrees Fahrenheit for 45 minutes

Let the beef wellington sit for around 10 to 15 minutes before cutting in it it
-
Serve with your favorite side dish and Enjoy
